湘岭猪与不同品种公猪杂交后代肌肉成分比较分析

摘要: 为研究湘岭猪与天府黑猪、川乡黑猪和山下长黑公猪杂交后代肌肉成分的差异,分别选取生长发育正常、体重60 kg左右的杂交后代育肥猪42头(每组14头,公母各半),分为天湘组、川湘组和山湘组,在相同饲养管理条件下饲喂至体重<100 kg,每组选择6头屠宰,分别取左边胴体1~3腰椎间背最长肌肉样进行肉质成分测定。结果表明:天湘组粗脂肪含量显著低于山湘组(P<0.05);天湘组苏氨酸、谷氨酸、苯丙氨酸和赖氨酸含量显著高于山湘组(P<0.05),丝氨酸含量显著高于川湘组和山湘组(P<0.05);天湘组癸酸含量显著低于川湘组和山湘组(P<0.05);天湘组锌的含量显著高于川湘组和山湘组(P<0.05)。综上,以天府黑猪为父本的杂交模式在氨基酸、脂肪酸及矿物质含量方面表现较优,以山下长黑为父本的杂交模式在常规营养指标粗脂肪方面具有优势。

Abstract: To investigate the differences in muscle composition among the hybrid offspring of Xiangling pigs crossed with Tianfu black pigs, Chuanxiang black pigs, and Shanxia Changhei boars, 42 fattening hybrid pigs (approximately 60 kg in weight, with normal growth and development, 50% sows and 50% barrows per group) were selected. They were divided into three groups: the Tian-Xiang group (cross with Tianfu black pigs), the Chuan-Xiang group (cross with Chuanxiang black pigs), and the Shan-Xiang group (cross with Shanxia Changhei pigs). The pigs were raised under identical feeding and management conditions until their weight reached approximately 100 kg. Six pigs from each group were selected for slaughter, and muscle samples were collected from the longissimus dorsi between the 1st and 3rd lumbar vertebrae of the left carcass for meat quality component determination. The results showed that the crude fat content in the Tian-Xiang group was significantly lower than that in the Shan-Xiang group (P<0.05), the contents of threonine, glutamic acid, phenylalanine, and lysine in the Tian-Xiang group were significantly higher than those in the Shan-Xiang group (P<0.05), and the content of serine in the Tian-Xiang group was significantly higher than that in the other two groups, the decanoic acid content in the Tian-Xiang group was significantly lower than that in the other two groups (P<0.05), and the zinc content in the Tian-Xiang group was significantly higher than that in the other two groups (P<0.05). In conclusion, the crossbreeding mode using Tianfu black as the sire performed better in terms of amino acids, fatty acids, and minerals, while the crossbreeding mode using Shanxia Changhei pigs as the sire showed advantages in the conventional nutritional indicator of crude fat.
