畜禽肌内脂肪的测定及分子调控机制研究进展

摘要: 肌内脂肪(Intramuscularfat,IMF)是影响动物肉品品质的重要指标,其含量的高低直接影响肉的口感和风味。IMF的测定目前以大理石纹评分、索氏抽提和超声波检测技术应用最为普遍;IMF的生成与沉积涉及多个分子和信号通路,其表达调控复杂且高度协调,包括关键基因、酶、信号通路及非编码RNA。本文从动物IMF的测定方法以及分子调控机制不同角度阐述畜禽动物IMF,旨在为畜禽的IMF选育提供有价值参考。

Abstract: Intramuscular fat is an important factor affecting the quality of meat, and its content directly affects the taste and flavor of meat. At present, the determination of intramuscular fat is most commonly used in marble score, soxhlet extraction and ultrasonic detection. The process of intramuscular fat formation and deposition involves various molecules and signaling pathways, complex and highly coordinated expression regulation, including key genes, enzymes, signaling pathways, and non-coding RNAs. Intramuscular fat content has an impact on multiple meat quality, including pH value, tenderness, juiciness, shear force, etc., and is affected by many factors. This paper expounded the intramuscular fat of livestock and poultry animals from different angles of the determination method, molecular regulation mechanism and the effect on meat quality, aiming to provide valuable reference for the intramuscular fat of animals breeding.
